A – EXTENSION

The cultivation of tea is inextricably linked to its place of origin. Tea plants thrive only under specific climatic conditions: sufficient rainfall, high humidity, and stable temperatures. Altitude, soil quality, and microclimate are particularly influential, together shaping the character of a tea. Slow-growing plants at higher altitudes develop denser leaves and more complex compounds than those from lower-lying regions.

Traditionally, tea originates from regions in East Asia, Southeast Asia, and parts of India. In these areas, a deep knowledge of cultivation, care, and harvesting has developed over centuries, which continues to determine quality to this day. High-quality tea usually comes from clearly defined tea gardens, not from industrially managed large-scale plantations. In smaller gardens, the focus is on soil care, selective pruning, and the long-term health of the plants, while yield plays a deliberately subordinate role.

The use of machinery is limited in quality-oriented tea cultivation. Many work steps are carried out by hand to avoid damaging the plants and to specifically control growth. The age of the tea plants also influences quality: older plants often produce lower yields, but result in more structure, depth, and stability in the leaf material. Therefore, quality in tea does not only arise during processing, but begins in the garden.

H – HARVEST

The harvest is one of the most crucial steps in tea processing and has a direct influence on the quality, structure, and character of a tea. Tea is not harvested according to fixed calendar dates, but rather according to the plant's stage of development. Growth, weather conditions, and altitude are the decisive factors that together determine the optimal time.

In many regions of origin, harvesting takes place several times a year. Early harvests in the spring are particularly prized, characterized by their freshness, clarity, and fine structure. Later harvests often provide more strength and depth, but lose some elegance. The distinction between first, second, or later harvests serves less as a hierarchy than as a way to classify the style of a tea.

High-quality tea is generally hand-picked. Defined plucking standards are used, usually consisting of one bud and one or two young leaves. These young leaf parts contain the highest concentration of aromatic and structural compounds. Machine harvesting, on the other hand, also gathers coarse leaves and stems and is primarily suitable for volume-oriented qualities.

Harvesting often takes place in the early morning hours, when the leaves are still cool and elastic. Improper or late plucking can damage the leaf structure and negatively affect subsequent processing. The harvest is therefore not a mechanical process, but requires experience, attention, and a trained eye. It forms the foundation for everything that develops from the tea during the subsequent stages.

F – FERMENTATION

Fermentation describes a microbial process in which enzymes and microorganisms alter the leaf material. Unlike oxidation, this is not a purely chemical reaction, but a living transformation over time. In the world of tea, fermentation is primarily associated with Pu-erh.

In fermented teas, not only does the taste change, but also the texture and shelf life. The leaves become more stable and develop additional layers with increasing maturity. Fermentation can occur naturally over years or be accelerated in a controlled manner.

Fermented teas are designed less for freshness and more for development. Quality here is shown in balance, clarity, and the ability to gain depth over time.

F – FIRST FLUSH

First Flush refers to the first harvest period of the year, which takes place after the tea plants' winter dormancy. Depending on the region of origin, it occurs between spring and early summer and is considered particularly defining for a tea's characteristics. After months of slow growth, delicate aromatic compounds and a clear structural tension are concentrated in the young leaves.

First Flush teas are valued for their freshness, lightness, and transparency. They often exhibit a distinct clarity and a vibrant structure that differs significantly from later harvests. The expression is less powerful, but more precise and nuanced. These qualities make First Flush a distinct stylistic category rather than a quality grade in the strict sense.

Historically, the First Flush was closely linked to the rapid availability of fresh teas. Early harvests were traded with preference to preserve their fresh character, which also gave rise to the term "air-freighted tea" (Flugtee). Today, First Flush primarily stands for closeness to the harvest and an unadulterated expression of the garden and the year.

First Flush teas are sensitive to processing, transport, and storage. Their quality lies less in intensity than in balance and structure. They reflect the state of the plant at the beginning of the year and make differences in origin, cultivation, and craftsmanship particularly visible.

G – YELLOW TEA

Yellow tea originates from China and is among the rarest of the classic tea varieties. Its production is historically closely linked to specific regions and small-scale producers. Due to the high level of craftsmanship involved and limited demand, yellow tea is still produced in very small quantities today.

The processing of yellow tea initially resembles that of green tea, but includes one additional step. After the leaves are heated, they undergo a controlled resting phase in which they are kept slightly moist and turned repeatedly. This process, often described as gentle yellowing, alters the structure and expression of the tea without allowing it to oxidize completely.

Yellow tea is characterized by a soft, rounded structure. It seems less vegetal than green tea and displays a restrained depth with a mild tension. Bitterness is barely present; instead, the focus is on balance and texture. Its effect is calm and harmonious.

Within the world of tea, yellow tea occupies an intermediate position. It combines the freshness of green teas with an added maturity and is considered an expression of the highest level of craftsmanship. Its rarity makes it less well-known, but no less significant.

G – GREEN TEA

Green tea has its origins in China, where it has been cultivated as a distinct type of tea for centuries. From there, a diverse tea culture developed with regionally distinct styles and processing techniques. In Japan, a separate tradition of green tea later emerged, which differs significantly from the Chinese one and is strongly focused on precision, standardization, and freshness.

After the harvest, the oxidation of green tea is intentionally halted to preserve the fresh leaf structure. In China, this is usually achieved by dry roasting in pans, whereas in Japan, the brief steaming of the leaves prevails. This decision has a lasting impact on the color, texture, and expression of the tea, leading to clearly distinguishable styles.

Green teas are characterized by clarity, freshness, and structural tension. They can appear vegetal, nutty, or mineral and often develop over several infusions. Bitterness is not a sign of quality, but usually results from water temperatures that are too high, steeping times that are too long, or inferior leaf quality.

The quality of a green tea is reflected in its balance, length, and transparency. Well-processed green tea appears vibrant and precise, without heaviness. It is sensitive to water, temperature, and storage, and therefore requires attention during preparation. Green tea also forms the basis for further processed forms such as matcha or hojicha, which originate from it.

H – HOJICHA

Hojicha is a type of Japanese tea that originated in the early 20th century. Unlike many other Japanese teas, Hojicha is not prized for its freshness or intensity, but rather for its calmness and balance. It is made from green tea that is roasted after processing, which gives it a distinct character.

Roasting is the central step in the production of Hojicha. It usually takes place at high temperatures and fundamentally changes the leaf structure. The heat breaks down bitter substances, reduces the caffeine, and develops new, warm aromas. Larger leaves, stems, or leaf remnants are often used as the base material, as they are particularly well-suited for roasting.

Hojicha is characterized by a mild, clear nature. It tastes nutty, slightly smoky, or reminiscent of toasted grain, without any heaviness or bitterness. Due to its low caffeine content, it is also suitable for consumption later in the day and is frequently enjoyed in Japan with meals or in the evening.

Compared to other green teas, the focus of Hojicha is not on freshness, but on warmth and balance. The roasting process provides stability, making it less sensitive to steeping time and water temperature. Hojicha demonstrates that quality in tea is not necessarily linked to intensity, but can also be found in restraint and clarity.

M – MATCHA

Matcha originates from Japan and is closely linked to the local tea culture. Its origins lie in specially cultivated tea gardens, where the tea plants are shaded for several weeks before harvest. This practice alters the growth of the leaves, increases the chlorophyll content, and promotes the development of specific amino acids that are crucial for structure and depth.

The basis for Matcha is Tencha, a green tea that is steamed, dried, and stripped of stems and leaf veins after harvest. Unlike other green teas, Tencha is not rolled. Only after this pre-processing are the leaves slowly ground into a fine powder, traditionally using stone mills. This step requires time and control, as heat can impair the quality.

Matcha is not steeped, but consumed in its entirety. This makes its effect and perception fundamentally different from other types of tea. The texture is fine and dense, the infusion creamy and clearly structured. High-quality Matcha exhibits balance, depth, and length, without bitterness or heaviness.

Quality in Matcha depends on several factors: origin, shading, time of harvest, grinding, and freshness. Since Matcha is sensitive to light, air, and temperature, storage and careful handling are especially important. Matcha demands attention, but rewards it with an immediate and concentrated expression of the tea plant.

O – OOLONG

Oolong has its origins in China, particularly in the provinces of Fujian and Guangdong. From there, a distinct tea culture developed, strongly shaped by craftsmanship, experience, and regional conditions. A second, clearly distinguishable Oolong tradition emerged later in Taiwan, where high altitudes, climate, and modern processing techniques allowed for different modes of expression. Chinese rock oolongs and Taiwanese high-mountain oolongs are considered two independent styles today.

Oolong is semi-oxidized, occupying a middle ground between green and black tea. The degree of oxidation varies significantly depending on the style and can range from light to highly advanced. Crucial to production are repeated withering, gentle rolling, and deliberate resting phases, during which the structure and character of the leaf develop. Each processing step requires precise timing and a deep understanding of the material.

Oolong teas are characterized by their depth and versatility. They combine freshness with maturity and unfold their character not in a single infusion, but over a sequence. Texture, length, and development are prioritized over immediate intensity. Good oolongs change from one infusion to the next, revealing different facets in the process.

In production, Oolong is considered one of the most technically demanding types of tea. Small variations in oxidation or roasting can fundamentally alter its character. High-quality Oolong is therefore always an expression of experience, attention, and craftsmanship. It stands as an exemplar of tea as a process rather than a fixed result.

O – OXIDATION

Oxidation refers to the reaction of oxygen with the cellular components of the tea leaf after harvesting. It begins as soon as the leaf structure is damaged and is intentionally controlled or stopped depending on the type of tea. Oxidation is a key factor in the classification of classic tea types.

Green and white teas are hardly oxidized, oolong partially, and black tea completely. The degree of oxidation influences the color, structure, and expression of the tea. What is crucial is not just the duration, but the interplay of temperature, humidity, and craftsmanship.

Oxidation is not an end in itself, but a tool. It shapes the character of a tea and requires precise control to maintain balance and clarity.

P – PICKING STAND

The plucking standard describes which parts of the tea plant are harvested. Combinations of the bud and young leaves are common, such as one bud with one or two leaves. These young leaf parts contain the highest concentration of structural compounds.

The finer the plucking standard, the lower the yield and the greater the manual labor required. Coarse plucking increases quantity but reduces precision and depth. The plucking standard directly influences the texture, clarity, and shelf life of a tea.

It is a decisive quality factor and is directly related to cultivation, harvesting, and processing.

P – PU-ERH

Pu Erh originates from the Chinese province of Yunnan, one of the oldest tea regions in the world. Large-leaf tea plants grow there, often in ancient gardens or as wild-growing trees. The region is characterized by high altitudes, mist, and stable climatic conditions, which lend the tea a particular depth and structure. Historically, Pu Erh was transported over vast trade routes and stored for long periods, which decisively shaped its development.

Unlike other types of tea, Pu Erh is fermented. A distinction is made between naturally aged Sheng Pu Erh and accelerated fermented Shou Pu Erh. Sheng Pu Erh matures slowly over years or decades, continuously changing its character in the process. Shou Pu Erh is created through a controlled fermentation process that mimics this maturation in a shortened form. Both forms are based on microbial processes that fundamentally alter structure, texture, and taste.

Pu Erh is characterized by density, depth, and stability. Young Sheng Pu Erh often appears powerful and structured, while aged qualities become softer, rounder, and multi-layered. Shou Pu Erh displays an earthy, calm structure from the start. Pu Erh is defined less by freshness than by development and change over time.

Due to its ability to mature, Pu Erh occupies a special position within the tea world. It is not only drunk, but accompanied and stored. Here, quality is reflected in consistency, balance, and the ability to gain depth over years. Pu Erh serves as an example of tea as a long-term process and an expression of time.

R – ROAST

Roasting is a processing step in which heat is applied purposefully to alter the structure and expression of the tea. It is primarily used for certain oolongs and for hojicha. Duration and temperature determine the result.

Through roasting, bitter compounds are reduced, moisture is removed, and new structural properties are created. The tea gains warmth, stability, and depth. At the same time, it loses some of its freshness and tension.

Roasting is a matter of balance. A roast that is too heavy masks the origin and leaf structure; a roast that is too light remains ineffective. High-quality roasting serves to provide clarity, not to mask.

S – BLACK TEA

Black tea originally developed in China, where it was produced as a distinct type of tea at an early stage. With the growth of trade in the 19th century, targeted production for export emerged, leading to the development of new styles. Later, tea cultivation was also established in India, Sri Lanka, and other regions, where the climate and processing methods allowed for different forms of expression. These developments have had a lasting impact on today's understanding of black tea.

Black tea is fully oxidized. After withering, the leaves are rolled or broken to open the cell structure and promote oxidation. This is followed by a controlled resting phase before the tea is stabilized through drying. The duration and intensity of the oxidation determine the structure, color, and depth of the finished tea.

Black tea is characterized by its stability, clarity, and length. It generally comes across as stronger than green or white teas, without necessarily being heavy. High-quality black tea displays balance, a clean structure, and a clear finish. Bitterness or a flat heaviness are not signs of quality, but rather indicators of over-oxidation or inferior leaf material.

Due to its robustness, black tea is less sensitive to brewing errors than other types of tea. At the same time, when crafted with artisanal quality, it offers a wide stylistic range, from delicate, transparent teas to structured, deep expressions. Black tea thus forms a central pillar of global tea culture and its diversity is often underestimated.

T – TERROIR

Terroir describes the interplay of soil, climate, altitude, and environment in which tea grows. The term originates from viticulture but is equally applicable to tea. Terroir often shapes the character of a tea more strongly than variety or processing.

Differences in soil, humidity, or solar radiation have a direct impact on growth and leaf structure. Teas from different gardens therefore show clearly distinguishable expressions, even with identical processing.

Terroir makes origin tangible in tea. It lends it individuality and depth.

It is a decisive quality factor and is directly linked to cultivation, harvesting, and processing.

U – UMAMI

UMAMI refers to the fifth taste alongside sweet, sour, salty, and bitter. In the context of tea, umami describes a full-bodied, rounded, and slightly savory flavor note.
Japanese green teas in particular, such as Gyokuro, Kabusecha, or Matcha, can exhibit pronounced umami notes, which are created by amino acids like L-theanine.

W – WATER

Water is an often underestimated factor in tea preparation. The mineral content, temperature, and freshness of the water influence the structure, clarity, and balance of the infusion. Even high-quality tea can lose its expression due to unsuitable water.

Soft, low-mineral water is particularly suitable for delicate teas, as it better supports their structure and nuances. Water that is too hard can increase bitterness and diminish clarity. Water temperature also plays a decisive role and should be adjusted to the respective type of tea.

Water is not a neutral medium, but part of the tea. It helps determine how the origin and processing are perceived.

W – WHITE TEA

White tea originates from the Chinese province of Fujian and is considered one of the oldest forms of tea processing. Traditionally, it comes from higher-altitude, often remote tea gardens where large-leaf tea plants are cultivated. For a long time, white tea was reserved for local producers and was only manufactured in small quantities, which explains its quiet, understated position within tea culture.

The processing of white tea is minimalist. After the harvest, the leaves are gently spread out and left to wither slowly in the air before being carefully dried. No targeted oxidation takes place; instead, a natural, very light transformation of the leaf material occurs. This restraint in processing requires high-quality raw material and great care, as mistakes cannot be corrected.

White tea is characterized by its delicacy, transparency, and soft texture. Its complexity lies less in intensity than in structure and length. Well-made white tea appears calm, balanced, and develops subtly over several infusions. With increasing age, it can gain depth without losing its clarity.

Compared to other types of tea, the focus with white tea is not on technique, but rather on trust in the leaf, the origin, and time. It shows particularly clearly how strongly quality depends on cultivation and harvest. White tea is an expression of restraint and precision, forming a conscious counterpoint to more heavily processed teas.

WESTERN PREPARATION

The Western method involves using a larger teapot. A smaller amount of tea is steeped in more water for several minutes. This method is particularly suitable for black tea, herbal infusions, and many blends. The taste is balanced and consistent.

EASTERN PREPARATION

In Eastern tea preparation, smaller vessels are used, such as a kyusu in Japan or very small pots in China. This requires more tea, but with shorter steeping times and multiple infusions. This method allows you to experience the development of a tea over several infusions and is particularly suitable for green teas, oolong, or pu-erh.
